Customer Testimonial: What It Actually Feels Like at the Wok Station
The demonstration
A spray of water is thrown into the air below the nozzle. It does not fall — it is caught by the air stream and flattened out sideways. That is the airflow a kitchen air conditioner has to work with, and it is the air that arrives where the cook is standing.
The restaurant team in this project tried it for themselves: standing at a wok range that runs above 40 °C all day, feeling directed cool air at the station for the first time.

Two things the footage shows
- The air arrives. The nozzle sits above and to the side of the range, and the stream covers the position where the cook stands. Backs stay dry through service.
- The flame is not disturbed. Nozzle angles are set so the air goes to the person and not across the burner. A stream that shifts the flame would slow every dish down, which is why this is checked at commissioning rather than assumed.
Why spot cooling suits a kitchen better than room cooling
A commercial kitchen is an open volume with a door curtain being pushed open all service, and an extract hood running continuously overhead. Cooling the whole room means paying to cool air that is about to be extracted. Spot cooling takes the other route: leave the room temperature where it is and put a smaller volume of cold air exactly where a person is working. It responds faster, and it costs less to run.
The part owners calculate
The largest hidden cost of a hot kitchen is turnover. Wok chefs quit in summer, replacements are hard to find, and a new hire takes months to reach the speed of the person who left.
- Throughput. With the temperature down, pace and concentration at the peak come back, and tables turn faster.
- Retention. Staff stay. "We cannot hire anyone in summer" stops being a crisis.
- Front of house. With open kitchens now standard, a cool, clean kitchen is something guests can see.
As one owner put it after fitting the system: "Since we installed the kitchen air conditioner after the refurbishment, the improvement in staff efficiency has been obvious — and satisfaction went up with it."
